It's well known, for example, that domestic cats can be picky eaters when they want to. I'm wondering if anything is known about dinos having favorite foods and / or if they crave variety in their diets.

I doubt the predators were fussy eaters, they'd eat whatever they could catch. The herbivores, on the other hand, were more fussy about their food. So how were multiple herbivore species able to live side by side without running out of food? The answer is simple: different species were built to eat different types of vegetation. Using CT scans, scientists at the University of Bristol, digitally reconstructed the skulls, jaws and neck muscles of two Sauropods, Camarasaurus and Diplodocus. They discovered that Camarasaurus had a strong bite, allowing it to feed on tough vegetation. The jaws of Diplodocus were weaker, meaning it was restricted to soft food. Also, most dinosaurs had jaws that only moved up and down, so they couldn't chew their food.
